Grilled Peach Salad

A vibrant summer salad combining grilled peaches, arugula, creamy goat cheese, and walnuts, drizzled with a honey-balsamic vinaigrette.

  • 4 fresh peaches
  • 6 cups fresh arugula
  • 4 oz goat cheese
  • 1/2 cup walnuts
  • 2 tbsp olive oil
  • 3 tbsp balsamic vinegar
  • 1 tbsp honey
  • Salt and pepper to taste

Instructions

  1. Preheat the grill to medium-high heat.
  2. Prepare the peaches by slicing them in half and removing the pits.
  3. Grill the peaches cut side down for 3-4 minutes until charred.
  4. Whisk together olive oil, balsamic vinegar, honey, salt, and pepper for the dressing.
  5. Assemble the salad by tossing arugula with grilled peaches, crumbling goat cheese, and adding walnuts.
  6. Drizzle with dressing and toss gently to combine.
  7. Serve immediately for the best flavor.

Notes

Best served fresh. Can prepare peaches and dressing ahead of time and assemble right before serving.
