Garlic Spinach and White Beans

A comforting and nutritious dish that combines sautéed spinach with creamy white beans and fragrant garlic.

  • 1 lb fresh spinach
  • 1 can (15 oz) white beans (cannellini, great northern, or navy)
  • 34 cloves garlic, minced
  • 1 tbsp fresh lemon juice
  • 1/4 cup chopped fresh herbs (parsley or basil)
  • 2 tbsp capers (optional)
  • 2 tbsp extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Prep your ingredients: Wash the spinach thoroughly and tear large leaves. Rinse and drain the beans. Mince the garlic.
  2. Heat up the oil: In a large skillet, heat 2 tablespoons of olive oil over medium heat.
  3. Sauté the garlic: Add the minced garlic and sauté for about a minute until fragrant, being careful not to brown it.
  4. Add the spinach: Add the spinach to the skillet and sauté for 2-3 minutes until wilted.
  5. Incorporate the beans: Gently fold in the white beans and cook for another 2-3 minutes.
  6. Season it up: Squeeze in lemon juice, and sprinkle with salt, pepper, and capers if using. Adjust seasoning as desired.
  7. Finishing touches: Turn off the heat and sprinkle fresh herbs over the dish.
  8. Plate it up: Serve warm or at room temperature, optionally over grilled chicken or toast.

Notes

Serve with a drizzle of olive oil and a lemon wedge for extra flavor.
