French Onion Chicken

A savory twist on classic French onion soup featuring juicy chicken breasts topped with caramelized onions and melted Gruyère cheese.

  • 4 Boneless, Skinless Chicken Breasts
  • 2 Onions, thinly sliced
  • 4 tablespoons Unsalted Butter
  • 1 cup Beef Broth
  • 1 cup Gruyère Cheese, shredded
  • 1 teaspoon Fresh Thyme (or 1/3 tsp dried thyme)
  • Salt and Pepper to taste

Instructions

  1. Gather all your ingredients and prep your vegetables.
  2. Melt butter in a large skillet over medium heat, then add sliced onions and sprinkle with salt.
  3. Stir frequently for about 20-25 minutes until onions are golden brown and fragrant.
  4. Add beef broth to deglaze the pan, scraping the bottom, and stir in thyme, salt, and pepper.
  5. Heat another pan with butter (or olive oil) over medium-high heat, season chicken breasts, and add to the hot pan.
  6. Sear for about 5-7 minutes on each side until golden brown and cooked through.
  7. Return caramelized onions to the pan, nestle chicken in, and cover with Gruyère cheese.
  8. Cover the skillet with a lid to melt the cheese or pop it under the broiler for an extra bubbly top.
  9. Garnish with fresh thyme and serve!

Notes

Serve with a side salad or crusty bread for soaking up the juices. This dish can be made in advance; just reheat before serving.
