  • 1/2 cup vegetable oil
  • 1 cup sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 3/4 cups all-purpose flour
  • 1/2 cup cocoa powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1/2 cup chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grease a 9×5 inch loaf pan and line it with parchment paper.
  3. Mix the wet ingredients: In a bowl, combine canned pumpkin, vegetable oil, sugar, eggs, and vanilla extract.
  4. Combine dry ingredients: In another bowl, whisk together flour, cocoa powder, baking soda, baking powder, salt, and ground cinnamon.
  5. Gradually add the dry to wet mixture, stirring until just combined.
  6. Fold in chocolate chips.
  7. Pour the batter into the prepared pan and smooth the top.
  8. Bake for 60-70 minutes, until a toothpick comes out clean.
  9. Cool for 10 minutes in the pan, then transfer to a wire rack.

Notes

For a different flavor, try using almond extract or adding chopped nuts.
