Pumpkin Bread with Cream Cheese

  • 1/2 teaspoon baking powder

  • 1 cup pumpkin puree
  • 1/2 cup sugar
  • 1/2 cup brown sugar
  • 1/2 cup vegetable oil
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 4 ounces cream cheese, softened

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Prepare a 9×5-inch loaf pan by greasing it or lining it with parchment paper.
  3. Mix the flour, baking soda, baking powder, cinnamon, nutmeg, and salt in a large mixing bowl.
  4. Whisk the pumpkin puree, sugar, brown sugar, vegetable oil, eggs, and vanilla extract in another bowl.
  5. Combine the wet mixture with the dry ingredients, folding gently to avoid overmixing.
  6. Prepare the cream cheese filling by beating it until smooth.
  7. Layer half of the pumpkin batter into the pan, then add the cream cheese filling, and top with the remaining batter.
  8. Bake for 60-70 minutes, or until a toothpick comes out clean.
  9. Cool in the pan for 10 minutes before transferring to a wire rack.
  10. Slice and enjoy, preferably warm!

For a rich flavor, let the wet mixture rest for a few minutes before combining. Serve with powdered sugar or butter.
