Easy Plum Tart

A deliciously simple tart featuring juicy plums in a flaky homemade crust.

Ingredients

  • 1 cup all-purpose flour
  • 1/4 cup vegan butter (diced)
  • 1/8 tsp salt
  • 1/4 tsp vanilla extract
  • 23 tbsp cold water
  • 1/4 cup almond flour
  • 5 medium ripe plums
  • 3 tbsp granulated sugar (for topping)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Make the dough by combining flour, almond flour, and salt. Add the diced vegan butter and mix until crumbly.
  3. Add vanilla extract and cold water, one tablespoon at a time, mixing until the dough holds together.
  4. Chill the dough in the fridge for about 30 minutes.
  5. Prepare the plums by washing and slicing them into wedges.
  6. Roll out the chilled dough on a floured surface to about 1/8 inch thick.
  7. Transfer the rolled-out dough into your tart pan, trimming the excess.
  8. Arrange the plum slices on top of the dough in an overlapping pattern.
  9. Sprinkle granulated sugar evenly over the plums.
  10. Bake for 30-35 minutes until the crust is golden brown and the plums are bubbly.
  11. Cool for a few minutes before serving.

Notes

Serve with whipped cream or vanilla ice cream for a delicious contrast.
