Dill Pickle Bread

A scrumptious loaf of bread infused with the crunchy, briny goodness of dill pickles, perfect for any pickle lover.

  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon salt
  • 1 tablespoon dried dill weed
  • 3 large eggs
  • 1 cup buttermilk
  • 1 cup dill pickles (finely chopped and well-drained)
  • 1/4 cup melted butter (optional)

Instructions

  1. Preheat the oven to 350°F (180°C) and grease a loaf pan.
  2. Mix the dry ingredients: whisk together flour, baking powder, baking soda, salt, and dill weed.
  3. Combine the wet ingredients: crack eggs and whisk, then add buttermilk and melted butter, mixing well.
  4. Incorporate the finely chopped pickles, folding them in to avoid excess moisture.
  5. Combine the wet mixture into the dry ingredients, stirring until just combined.
  6. Transfer the batter to the prepared loaf pan and smooth with a spatula.
  7. Bake for about 50-60 minutes, or until a toothpick comes out clean.
  8. Cool for 10-15 minutes before transferring to a wire rack to cool completely.

Notes

For a gluten-free option, substitute all-purpose flour with a gluten-free blend. For a vegan option, use flaxseed meal instead of eggs and a non-dairy milk with lemon juice instead of buttermilk.
