  • 2 cups cucumbers, diced
  • 2 cups tomatoes, diced
  • 1 avocado, diced
  • 1/4 cup fresh cilantro, chopped
  • 1/4 cup lemon juice
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Prepare your veggies by washing them thoroughly.
  2. Dice the cucumbers into chunks.
  3. Chop the tomatoes into similar-sized pieces as the cucumbers.
  4. Prep the avocado by removing the pit and chopping it into chunks.
  5. Chop the cilantro finely.
  6. Combine all ingredients in a large bowl and toss gently.
  7. Dress the salad with lemon juice and olive oil, and season with salt and pepper.
