Roasted Beets

  • 1 bunch of fresh beets (about 34 medium-sized)
  • 1 tablespoon olive oil or avocado oil
  • 1 teaspoon Kosher salt
  • 1/2 teaspoon ground black pepper

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Scrub the beets under cold running water to remove dirt.
  3. Trim off the greens at the top and chop the beets into uniform pieces, about 1 to 2 inches in size.
  4. Toss the beet pieces with olive oil, Kosher salt, and black pepper in a large bowl.
  5. Spread the beets in a single layer on a lined baking sheet and roast for 30-45 minutes.
  6. Allow the beets to cool for a few minutes before serving.

Notes

Be sure to wear gloves when peeling the beets to avoid stained hands.
