Loaded Mashed Potato Bites

Delicious and crispy Loaded Mashed Potato Bites made from leftover mashed potatoes, packed with cheddar cheese and bacon.

  • 2 cups mashed potatoes (cooled)
  • 1 cup shredded cheddar cheese
  • 4 slices cooked bacon (crumbled)
  • 2 tablespoons chopped chives or green onions
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon salt (adjust to taste)
  • 1 large egg
  • 1/2 cup all-purpose flour
  • 1 cup breadcrumbs (plain or seasoned)
  • Oil for frying (vegetable or canola)

Instructions

  1. Prepare your mashed potatoes: Start with chilled mashed potatoes, stirring well if using leftovers.
  2. Combine in a large bowl: Mix together mashed potatoes, cheddar cheese, bacon, chives, garlic powder, black pepper, and salt.
  3. Add egg and flour: Crack in the egg and mix until just combined.
  4. Shape the bites: Form the mixture into 1-inch balls or patties and place on a lined baking sheet.
  5. Prep your cooking station: Heat oil in a skillet over medium heat until hot.
  6. Coat the bites: Roll each bite in breadcrumbs until fully coated.
  7. Fry the bites: Cook in hot oil for 3-4 minutes on each side until golden brown.
  8. Serve and enjoy: Best served immediately with dipping sauce.

Notes

Great for using up leftover mashed potatoes. Can also be baked instead of fried.
