Garlic Parmesan Roasted Zucchini

  • 4 medium zucchinis, sliced
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1/2 cup Parmesan cheese, grated
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Slice the zucchinis into about ½-inch thick rounds.
  3. Combine the olive oil, minced garlic, Italian seasoning, salt, and pepper in a large mixing bowl.
  4. Toss the sliced zucchini in the garlic mixture until well coated.
  5. Arrange the zucchini in a single layer on a baking sheet.
  6. Sprinkle the grated Parmesan cheese evenly over the zucchini slices.
  7. Roast for about 20-25 minutes until golden brown and crispy on the edges.
  8. Garnish with fresh parsley before serving.

Notes

For a spicier kick, add red pepper flakes to the olive oil mix. You can also customize this dish by using different cheeses or fresh herbs.
