Asian Cucumber Salad

A refreshing Asian Cucumber Salad with a punchy sauce, perfect as a side dish or a light meal.

Ingredients

  • 5 cucumbers
  • 3 tsp granulated white sugar
  • 2 tsp sesame seeds
  • 1 tsp garlic (crushed)
  • 2 to 3 tbsp green onion (chopped)
  • 1 ½ tbsp soy sauce
  • 3 tsp rice vinegar
  • 3 tsp Chinese chili oil
  • 1 tsp sesame oil
  • 3 tsp salt

Instructions

  1. Prepare the cucumbers by washing them and slicing them into thin rounds.
  2. Salting the cucumbers by tossing them with salt and letting them sit in a colander for 10-15 minutes.
  3. Whisk together the dressing ingredients, including soy sauce, rice vinegar, sesame oil, sugar, garlic, and chili oil until combined.
  4. Combine the cucumbers with green onions and sesame seeds, then pour the dressing over and toss to coat.
  5. Chill in the fridge for at least 20-30 minutes before serving.

Notes

This salad can be served alongside grilled meats or as a refreshing stand-alone dish. It can also be prepared in advance and keeps well in the fridge for up to 2 days.
