Creamy Tuscan Chicken

A delightful chicken dish featuring succulent breasts in a creamy sauce with spinach and sun-dried tomatoes, evoking the flavors of Tuscany.

  • 2 boneless and skinless chicken breasts
  • 2 cups fresh spinach
  • 1/2 cup sun-dried tomatoes, chopped
  • 3 cloves garlic, minced
  • 1/2 cup Parmesan cheese, grated
  • 1 cup heavy cream
  • Salt and pepper, to taste
  • Olive oil, for cooking

Instructions

  1. Prep your chicken: Season the chicken breasts with salt and pepper and pound them to even thickness.
  2. Sear the chicken: Heat olive oil over medium-high heat and cook the chicken for about 5-7 minutes on each side until golden brown. Remove and set aside.
  3. Sauté the garlic: In the same pan, add oil if needed and sauté minced garlic until fragrant, about 1 minute.
  4. Add the spinach and sun-dried tomatoes: Stir until the spinach wilts down.
  5. Make it creamy: Pour in heavy cream and add grated Parmesan, stirring until melted.
  6. Return the chicken: Nestle the seared chicken into the sauce and let it simmer for 2-3 minutes.
  7. Taste and adjust seasoning with salt, pepper, and optional red pepper flakes.

Notes

Serve over pasta or rice and top with fresh parsley or extra grated Parmesan. Pair with a crisp green salad.
