Creamy Lemon Pasta

A comforting and zesty dish that combines pasta with a rich creamy lemon sauce.

  • 8 ounces pasta (spaghetti, fettuccine, or penne)
  • 1 lemon (zest and juice)
  • 4 tablespoons butter (divided)
  • 1 cup heavy cream
  • 2 cloves garlic (finely minced)
  • ¾ cup parmesan (finely grated)
  • Salt and fresh black pepper to taste
  • Optional: 1 teaspoon of flour

Instructions

  1. Cook the pasta: Start a large pot of salted water on high heat. Once boiling, add the pasta and cook until al dente. Save about ½ cup of pasta water before draining.
  2. Prep the garlic and lemon: Finely mince your garlic, zest the lemon, and juice it.
  3. Create the base: In a large skillet, melt 2 tablespoons of butter over medium heat. Add garlic and sauté for 1-2 minutes until fragrant.
  4. Add the cream: Pour in the heavy cream and bring to a gentle simmer. If using flour, sprinkle it in now and whisk.
  5. Combine lemon: Stir in the lemon zest and juice, letting it simmer for a few minutes until slightly thickened.
  6. Cheesy goodness: Gradually add parmesan, stirring until melted. If thick, add reserved pasta water to reach desired consistency.
  7. Combine pasta and sauce: Toss in the drained pasta, ensuring it’s well coated. Add more pasta water if needed.
  8. Finish with butter and seasoning: Add remaining butter and season with salt and pepper. Stir until silky.

Notes

Serve with extra parmesan, fresh herbs, and a wedge of lemon. Pairs well with white wine or sparkling water.
