Creamy Lemon Feta Pasta

A refreshing dish that combines the brightness of lemon with the creamy richness of feta cheese, perfect for summer.

  • 12 oz Pasta (penne, spaghetti, or your choice)
  • 1 tablespoon Olive Oil
  • 2 cloves Garlic, minced
  • 1 cup Crumbled Feta Cheese
  • 1/2 cup Heavy Cream (or whole milk for a lighter version)
  • 1/4 cup Fresh Lemon Juice (about 1 lemon)
  • Zest of 1 Lemon
  • 1/4 teaspoon Red Pepper Flakes (optional)
  • Salt and Pepper, to taste
  • Fresh Basil or Parsley, chopped (for garnish)
  • Grated Parmesan Cheese (optional, for extra creaminess)

Instructions

  1. Cook the Pasta: In a large pot, bring salted water to a boil. Add pasta and cook according to package instructions until al dente, about 8-10 minutes. Reserve 1 cup of pasta water before draining.
  2. Sauté the Garlic: In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for 1-2 minutes until fragrant.
  3. Make the Creamy Sauce: Reduce heat to low, add heavy cream, and stir. Crumble feta into the skillet.
  4. Add Lemon Goodness: Mix in lemon juice and zest, and season with red pepper flakes, salt, and pepper to taste.
  5. Combine Pasta and Sauce: Add cooked pasta to the skillet, toss to coat, and add reserved pasta water as needed for consistency.
  6. Serve It Up: Plate the pasta, garnish with herbs and Parmesan, and serve immediately.
