Creamy Keto Chicken Cream Cheese Soup

  • 4 oz cream cheese, softened
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 cup mushrooms, sliced
  • 1 cup spinach, chopped
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • 1 teaspoon Italian seasoning

Instructions

  1. Sauté the vegetables: In a large pot or Dutch oven, heat 1 tablespoon of olive oil over medium heat. Once hot, add the minced garlic and sauté for about 30 seconds until fragrant.
  2. Add the mushrooms: Toss in your sliced mushrooms and a pinch of salt. Sauté until they’re golden brown and tender, about 5-7 minutes.
  3. Stir in the chicken broth: Pour in 4 cups of chicken broth. Bring it to a gentle simmer.
  4. Add the shredded chicken: Stir in your shredded chicken and let it simmer until warmed through, about 5 minutes.
  5. Incorporate the spinach: Toss in the chopped spinach, stirring until it wilts, about 1-2 minutes.
  6. Creamy goodness time: Reduce heat to low, add the softened cream cheese, stirring until fully melted. Then pour in 1 cup of heavy cream, stirring continuously until smooth.
  7. Season and serve: Finally, season with salt, pepper, and 1 teaspoon of Italian seasoning to taste. Give it a stir and remove from heat.
