Creamy Corn Chowder: A Hug in a Bowl

A rich and velvety corn chowder that warms the belly with flavors of corn, potatoes, and bacon.

Ingredients

  • Fresh Corn (4-5 ears)
  • Potatoes (2 medium, preferably Yukon Gold)
  • Bacon (4 slices)
  • Heavy Cream (1 cup)
  • Onion (1 medium, diced)
  • Vegetable or Chicken Broth (4 cups)
  • Garlic (2 cloves, minced)
  • Salt, Pepper, Thyme (to taste)

Instructions

  1. Prep your corn by shucking and cutting the kernels off the cob.
  2. Cook the bacon in a large pot over medium heat until crispy, about 5-7 minutes. Remove with a slotted spoon and set aside.
  3. Sauté diced onions and garlic in the bacon fat until translucent, about 5 minutes.
  4. Toss in diced potatoes, corn, broth, and thyme. Bring to a boil, then simmer for 15 minutes.
  5. Cream it up by stirring in the heavy cream and simmer for another 5-10 minutes.
  6. Crank up the flavor by adding salt, pepper, and crispy bacon bits before serving.
  7. Serve hot, garnished with fresh thyme or chives.
