Creamy Chicken Soup

A comforting creamy chicken soup filled with tender chicken, vegetables, and rich flavors, perfect for chilly evenings.

  • 2 cups Chicken (boneless, skinless thighs or breasts, chopped)
  • 1 cup Carrots (chopped)
  • 1 cup Celery (chopped)
  • 2 cups Potatoes (Yukon Gold or russet, diced)
  • 1 Onion (yellow or white, chopped)
  • 3 cloves Garlic (minced)
  • 4 cups Chicken broth
  • 1 cup Heavy cream
  • 2 tbsp Olive oil or butter
  • Salt and pepper (to taste)

Instructions

  1. Prep your veggies: Chop carrots, celery, onions, and potatoes into bite-sized pieces.
  2. Heat a tablespoon of olive oil in a large pot over medium heat.
  3. Add the onions and sauté for about 2-3 minutes until translucent.
  4. Include minced garlic and sauté for another 30 seconds.
  5. Stir in chopped carrots, celery, and potatoes and cook for 5-7 minutes.
  6. Add the chicken pieces to the pot and sauté until just cooked.
  7. Pour in the chicken broth and bring to a gentle boil.
  8. Reduce heat to low, cover, and simmer for 15-20 minutes.
  9. Stir in the heavy cream and warm through for 5 minutes.
  10. Serve in bowls and garnish with parsley or chives.

Notes

Feel free to customize with herbs, spices, or leftover vegetables. Store leftovers in the fridge for up to 3 days.
