Creamed Spinach

A classic creamed spinach recipe that combines fresh spinach with a rich, creamy sauce for a delicious side dish.

  • 1 pound fresh spinach
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Nutmeg (optional)

Instructions

  1. Prep the spinach by washing it thoroughly and chopping coarsely.
  2. Sauté the spinach in a large skillet with melted butter over medium heat for about 3-5 minutes.
  3. Make the roux by melting the remaining butter in a saucepan and stirring in the flour for 1-2 minutes.
  4. Add the heavy cream gradually while whisking continuously until thickened.
  5. Combine the sautéed spinach, cheese, salt, pepper, and nutmeg into the cream sauce.
  6. Final adjustments: Taste and modify seasoning as desired.
  7. Serve in a bowl and sprinkle additional cheese on top if desired.

Notes

This recipe can be adjusted by adding sautéed mushrooms, red pepper flakes for spice, or using coconut milk for a vegan version.
