Coconut Sorbet

A refreshing and creamy coconut sorbet that brings the taste of the tropics to your home. Perfect for cooling off on hot summer days!

Ingredients

  • 2 cups coconut milk
  • 1/2 cup sugar
  • 1 tablespoon lime juice
  • 1 teaspoon vanilla extract
  • 1/4 cup shredded coconut (optional)

Instructions

  1. Mix the coconut milk and sugar in a medium bowl until the sugar is dissolved.
  2. Add the lime juice and vanilla extract, stirring well to combine.
  3. Texture check: mix in the shredded coconut if desired.
  4. Chill the mixture in the refrigerator for at least 1-2 hours.
  5. Churn in an ice cream maker according to the manufacturer’s instructions or freeze in a shallow dish, stirring every 30 minutes, until smooth and creamy.
  6. Transfer to an airtight container and freeze for 2-3 hours.
  7. Serve by letting the sorbet sit at room temperature for 5-10 minutes to soften slightly.
