Classic Blueberry Buckle

A delightful dessert combining juicy blueberries with a tender, buttery cake base topped with a crumbly streusel.

  • 2 cups cake flour
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 4 tbsp butter (room temperature)
  • 3/4 cup sugar
  • 1 egg
  • 1/2 cup whole milk
  • 1 tsp vanilla extract
  • 3 cups fresh or frozen blueberries
  • For the streusel topping:
  • 1/2 cup sugar
  • 1/3 cup cake flour
  • 1/2 tsp cinnamon
  • 4 tbsp cold butter (cubed)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prep a 9-inch round cake pan or an 8×8 square pan by greasing it and sprinkling with flour.
  3. Mix the dry ingredients: cake flour, baking powder, and salt in a medium bowl.
  4. Cream the butter and sugar until pale and fluffy in a large bowl.
  5. Add in the egg, whole milk, and vanilla extract, mixing until combined.
  6. Combine the wet and dry ingredients, mixing on low until just combined.
  7. Fold in the blueberries gently.
  8. Prepare the streusel by mixing sugar, cake flour, and cinnamon, then adding cubed cold butter.
  9. Assemble the batter in the pan and scatter the streusel topping over it.
  10. Bake for 40-45 minutes or until the top is golden and a toothpick comes out clean.
  11. Cool for 10-15 minutes before serving.

Notes

Serve warm with powdered sugar, fresh blueberries, or a scoop of ice cream. Feel free to add nuts or other berries for variations.
