Chocolate Raspberry Tart

  • 1 1/2 cups chocolate wafer cookies, crushed
  • 1/2 cup unsalted butter, melted
  • 1 cup heavy cream
  • 8 ounces dark chocolate, chopped
  • 2 cups fresh raspberries
  • 1 tablespoon powdered sugar

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Combine the crushed chocolate wafer cookies and melted butter in a medium bowl until resembling wet sand. Press firmly into a 9-inch tart pan and bake for 10 minutes. Let cool.
  3. Heat the heavy cream in a saucepan over medium heat until it simmers. Remove from heat and add the chopped dark chocolate. Stir until smooth.
  4. Pour the chocolate mixture into the cooled crust and give it a gentle jiggle to settle evenly.
  5. Cover with plastic wrap and refrigerate for at least 2 hours.
  6. Arrange fresh raspberries on top once set.
  7. Dust with powdered sugar for a fancy touch.
  8. Slice and serve, optionally with whipped cream or ice cream.

Notes

This tart can be made a day in advance. Use frozen raspberries if fresh ones aren’t available.
