Cozy Chicken & Wild Rice Soup

A warm, creamy, and hearty Chicken & Wild Rice Soup that’s perfect for chilly evenings.

  • 1 lb Boneless, skinless chicken breasts or thighs
  • 1 cup Wild rice
  • 2 Carrots, diced
  • 2 stalks Celery, diced
  • 1 cup Heavy cream
  • 6 cups Chicken broth
  • 2 cloves Garlic, minced
  • 1 Onion, diced
  • Salt, to taste
  • Pepper, to taste
  • 1 tsp Thyme
  • 2 Bay leaves

Instructions

  1. Prep your ingredients: chop chicken, dice carrots and celery, and mince garlic.
  2. Sauté the aromatics: heat olive oil, add onion, and cook until translucent. Stir in garlic.
  3. Cook the chicken: add chicken to the pot, season with salt, pepper, and thyme. Brown for 5-7 minutes.
  4. Add the veggies: toss in carrots and celery, cooking for another 3-4 minutes.
  5. Pour in wild rice and stir well.
  6. Pour chicken broth into the pot and bring to a boil. Reduce heat and let simmer for 40-45 minutes.
  7. Stir in heavy cream and simmer for an additional 5-10 minutes.
  8. Taste and adjust seasonings as needed before serving.

Notes

For a lighter option, substitute heavy cream with half-and-half or coconut milk. Fresh herbs make a great garnish when serving.
