Cherry Crumb Pie

A nostalgic cherry crumb pie featuring a flaky crust, tart cherries, and a crunchy streusel topping, perfect for summer gatherings.

  • 1 9-inch pie crust (store-bought or homemade)
  • 5 cups pitted cherries (whole or cut in half)
  • 1 tsp vanilla extract
  • 1 tsp almond extract
  • 2/3 cup white granulated sugar
  • 1/4 cup cornstarch
  • 2/3 cup all-purpose flour
  • 1/4 cup white granulated sugar (for crumb topping)
  • 1/3 cup light brown sugar
  • 4 tbsp unsalted butter
  • Pinch of salt

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Prepare the pie crust by rolling it out and placing it into a 9-inch pie dish, crimping the edges properly.
  3. Mix the cherry filling in a bowl with pitted cherries, vanilla extract, almond extract, 2/3 cup white sugar, and cornstarch.
  4. Assemble the pie by pouring the cherry mixture into the prepared crust.
  5. Make the crumb topping by mixing flour, 1/4 cup white sugar, light brown sugar, a pinch of salt, and cold butter until it resembles coarse crumbs.
  6. Top the pie with the crumb topping evenly over the cherry filling.
  7. Bake the pie for 35-40 minutes, until the topping is golden brown and the cherries are bubbling.
  8. Cool the pie for at least 30 minutes before slicing.
