Butternut Squash, Goat Cheese, and Caramelized Onion Quiche

A delicious and hearty quiche featuring butternut squash, creamy goat cheese, and sweet caramelized onions, perfect for any occasion.

  • 1 Butternut Squash, peeled and diced
  • 1 Onion, thinly sliced
  • 1 Tablespoon Olive Oil
  • 1 Pre-Made Pie Crust
  • 4 Eggs
  • 1 Cup Milk
  • 1 Cup Goat Cheese, crumbled
  • Salt and Pepper to taste
  • Fresh Thyme (optional, for garnish)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Sauté the onions in olive oil over medium heat for 10-15 minutes until caramelized.
  3. Add the diced butternut squash and cook for another 5-7 minutes until tender.
  4. Prepare your pie crust according to package instructions or place it straight in your pie dish.
  5. Make the egg mixture by whisking eggs and milk together and seasoning with salt and pepper.
  6. Layer half of the goat cheese in the bottom of the pie crust, then add the vegetable mix, followed by the egg mixture and the remaining goat cheese.
  7. Bake for 35-40 minutes until the filling is set and the top is golden brown.
  8. Cool for 10 minutes before slicing and garnish with fresh thyme if desired.
