  • 1 onion, diced (optional)
  • 4 cups vegetable or chicken broth
  • 1 tablespoon olive oil
  • Salt and pepper, to taste

Instructions

  1. Prep your veggies: Start by chopping the broccoli into bite-sized florets and slicing the carrots.
  2. Cook the carrots and broccoli: In a large pot, add olive oil over medium heat. Sauté the chopped carrots for about 5 minutes, then add the broccoli and cook for an additional 5 minutes.
