Brimstone Cookies

Brimstone Cookies are a delightful blend of sweet and spicy, featuring chocolate, cinnamon, and a hint of red pepper flakes.

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 cup brown sugar, packed
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup chopped nuts (optional)
  • 1 cup chocolate chips or other mix-ins (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Mix together the softened unsalted butter, granulated sugar, and brown sugar until smoothly combined.
  3. Add in the eggs and vanilla extract, mixing until fully incorporated.
  4. Combine the flour, baking soda, and salt in a separate bowl, then gradually add it into the wet ingredients.
  5. Fold in the chocolate chips and nuts until evenly dispersed.
  6. Scoop rounded tablespoons of dough onto a parchment-lined baking sheet, leaving space in between.
  7. Bake for 10–12 minutes, or until the edges are lightly golden.
  8. Let the cookies cool on the baking sheet for a few minutes before transferring to a wire rack.

Notes

For variations, try adding orange zest, using almond flour, or incorporating shredded coconut.
