Blueberry Peach Feta Salad

A refreshing summer salad combining juicy peaches, sweet blueberries, and tangy feta cheese, perfect for any occasion.

Ingredients

Scale
  • 4 cups Fresh Spinach
  • 2 Ripe Peaches, sliced
  • 1 cup Blueberries
  • 1/2 cup Crumbled Feta Cheese
  • 1/4 cup Walnuts, chopped
  • 2 tablespoons Olive Oil
  • 2 tablespoons Fresh Lemon Juice
  • 1 tablespoon Honey
  • Salt and Pepper, to taste

Instructions

  1. Prep your ingredients: Start by washing your spinach and blueberries under cool water. Pat them dry with a clean kitchen towel or use a salad spinner to remove excess moisture. No one wants a soggy salad!
  2. Chop the peaches: Slice your peaches into wedges or chop them into bite-sized pieces. Make sure to remove the pit—nobody likes unexpected surprises!
  3. Toast the walnuts: In a dry skillet over medium heat, add the walnuts. Toast them for about 3-5 minutes, stirring occasionally until they are golden and fragrant.
  4. Make the dressing: In a small bowl, whisk together the olive oil, lemon juice, honey, salt, and pepper until well combined. Taste and adjust the seasonings as needed.
  5. Assemble your salad: In a large bowl, combine the spinach, peaches, blueberries, and crumbled feta. Drizzle with your homemade dressing and toss gently to coat.
  6. Add the toasted walnuts: Just before serving, sprinkle the toasted walnuts on top for that crunch factor.
  7. Plate up: Serve your Blueberry Peach Feta Salad in a large bowl or on individual plates.

Notes

Feel free to customize the salad with proteins like grilled chicken or chickpeas, or add fresh herbs for an herbal infusion.
