Blueberry and Lemon Zest Cottage Cheese Bites

A delightful protein-packed treat made with creamy cottage cheese, juicy blueberries, and zesty lemon.

Ingredients

  • 1 cup cottage cheese
  • 1 cup rolled oats
  • 1 large egg
  • 1/4 cup honey or maple syrup
  • 1 tsp vanilla extract
  • Zest of 1 large lemon (about 1 tbsp)
  • 1/2 tsp baking powder
  • A pinch of salt
  • 3/4 cup fresh or frozen blueberries

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Mix the cottage cheese, egg, honey, and vanilla extract in a large bowl until smooth.
  3. Add the lemon zest to the wet ingredients and stir.
  4. Combine the rolled oats, baking powder, and salt in a separate bowl.
  5. Combine the dry mixture with the wet mixture gently.
  6. Add the blueberries and fold carefully.
  7. Scoop tablespoons of the mixture onto the baking sheet and bake for 15–20 minutes.
  8. Cool on the baking sheet for a few minutes before transferring to a wire rack.

Notes

Serve warm with a drizzle of honey or extra lemon zest. They can also be frozen for up to 2–3 months.
