  • 1 ½ cups all-purpose flour
  • ½ cup granulated sugar
  • ½ cup unsalted butter, melted
  • ¼ teaspoon salt
  • 8 ounces cream cheese, softened
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 2 cups fresh blueberries
  • 1 tablespoon cornstarch
  • 1 tablespoon lemon juice
  • 2 tablespoons granulated sugar

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Combine the flour, sugar, and salt in a mixing bowl. Add in the melted butter and mix until it resembles wet sand.
  3. Press the crust mixture into a 9×9-inch baking dish and bake for about 10-12 minutes.
  4. Blend together the cream cheese, powdered sugar, and vanilla extract until smooth. Add the eggs, one at a time, mixing well after each addition.
  5. Mix the blueberries with cornstarch, lemon juice, and sugar until they are well coated.
  6. Spread the cream cheese filling over the baked crust, and drop spoonfuls of the blueberry mixture on top.
  7. Bake for an additional 25-30 minutes until the filling is set.
  8. Cool completely and slice into squares.

Notes

Dust with powdered sugar or serve with whipped cream for extra indulgence. Store leftovers in an airtight container in the fridge.
