Biscoff Butter Cookies

  • 1/2 cup unsalted butter (room temperature)
  • 1/2 cup Speculoos or Biscoff cookie butter
  • 2/3 cup light brown sugar (packed)
  • 1 large egg (room temperature)
  • 1 teaspoon vanilla extract
  • 1 1/2 cups + 1 tablespoon all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • Extra cookie butter for topping

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cream the unsalted butter and Biscoff cookie butter in a mixing bowl until creamy.
  3. Add the light brown sugar and beat until well combined and fluffy.
  4. Incorporate the room temperature egg and vanilla extract until just combined.
  5. Mix the flour, salt, and baking soda in a separate bowl.
  6. Combine the flour mixture with the wet ingredients until no dry flour remains.
  7. Scoop mounds of dough onto a parchment-lined baking sheet, leaving space in between.
  8. Top each scoop with extra cookie butter.
  9. Bake for 10-12 minutes or until edges are golden brown.
  10. Cool on the tray for a few minutes before transferring to a wire rack.

Notes

Cookies can be enjoyed warm or topped with ice cream for extra indulgence. Experiment with variations like adding chocolate chips or nuts.
