Light and Creamy Pink Fluff

  • 1 cup boiling water
  • 1 cup cottage cheese
  • 1 cup nondairy dessert topping (like Cool Whip, thawed)
  • 1 can (8 oz) crushed pineapple, drained
  • 1 cup fresh strawberries, washed, dried, and sliced
  • Optional: 1 cup mini marshmallows or 1/2 cup chopped nuts

Instructions

  1. Dissolve the gelatin by pouring the strawberry gelatin powder into a mixing bowl, adding boiling water, and stirring until completely dissolved.
  2. Mix in the cottage cheese, stirring gently to combine.
  3. Fold in the nondairy dessert topping carefully to maintain fluffiness.
  4. Add the drained crushed pineapple and sliced strawberries to the mixture.
  5. Optional add-ins: If desired, mix in mini marshmallows or chopped nuts.
  6. Chill the mixture in the fridge for at least two hours until set.
