Chewy Banana Bread Cookies

A delightful twist on classic banana bread, these chewy cookies capture the nostalgic flavor and texture of banana bread in a portable treat.

  • 2 ripe bananas, mashed
  • 1/2 cup melted butter
  • 1 cup brown sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 1/2 cup chocolate chips (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare your baking sheet by lining it with parchment paper or a silicone baking mat.
  3. Mash the ripe bananas in a large mixing bowl until smooth with a few lumps.
  4. Add the melted butter to the bananas, then mix in brown sugar, egg, and vanilla extract until well combined.
  5. Combine the all-purpose flour, baking soda, salt, and cinnamon in a separate bowl.
  6. Fold the dry ingredients into the wet ingredients until just mixed.
  7. Add chocolate chips if using and mix gently.
  8. Scoop heaping spoonfuls of cookie dough onto the prepared baking sheet, spacing them about 2 inches apart.
  9. Bake for 10–12 minutes, or until golden brown around the edges.
  10. Cool on the baking sheet for 5 minutes before transferring to a wire rack.

Notes

For a vegan option, use applesauce instead of the egg and replace butter with coconut oil.
