  • 1/2 cup powdered sugar
  • 1/2 cup unsalted butter, softened
  • 1 cup fresh blackberries
  • 1 tablespoon lemon juice
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1 tablespoon cornstarch
  • 1/2 cup brown sugar

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare an 8×8-inch baking dish, lightly greasing it with butter or cooking spray.
  3. Make the crust by combining the flour, powdered sugar, and salt, then mixing in the softened butter.
  4. Bake the crust for about 15 minutes, or until lightly golden.
  5. Prepare the blackberry filling by mixing blackberries, lemon juice, brown sugar, cornstarch, and vanilla extract in a bowl.
  6. Assemble the bars by pouring the blackberry mixture over the baked crust.
  7. Bake again for 25 to 30 minutes or until bubbly.
  8. Cool the pan on a wire rack before slicing.

Notes

These bars serve well with whipped cream or vanilla ice cream. They can be stored in the fridge for up to 5 days.
