Hearty and Flavorful Beef Stew

A cozy, classic beef stew that wraps you in warmth and comfort, perfect for chilly nights.

Ingredients

  • 2 lbs Beef Chuck, cut into cubes
  • 3 Carrots, chopped
  • 4 Potatoes, cubed (Russet or Yukon Gold)
  • 2 stalks Celery, chopped
  • 4 cups Beef Broth
  • 1 Onion, chopped
  • Salt and Pepper, to taste
  • Oil, for searing
  • Optional: Fresh herbs (thyme, bay leaves)

Instructions

  1. Sear the meat: Heat a large pot over medium-high heat, add oil, and season beef with salt and pepper, then sear in batches.
  2. Add aromatics: Remove beef, then sauté onions and celery in the same pot for 5 minutes.
  3. Toss in the veggies: Add carrots and potatoes, stirring for about 3-4 minutes.
  4. Deglaze: Pour in the broth, scraping the bottom of the pot, and bring to a gentle boil.
  5. Simmer and transform: Add the beef back into the pot, cover, and simmer for 1.5-2 hours.
  6. Final touches: Stir occasionally, taste and adjust seasoning, and thicken if desired.
  7. Serve it up: Ladle into bowls and garnish with fresh herbs if desired.

Notes

For a thicker stew, whisk together cornstarch with water and add it during the simmering process. Slow cooker option available—brown beef first then combine all ingredients in the slow cooker.
