  • 3 Carrots, thick slices
  • 1/2 cup Balsamic Vinegar
  • 1 cup Beef Broth (optional)
  • 1 Onion, diced (optional)

  • 1 teaspoon Pepper

Instructions

  1. Prep the Ingredients: Begin by chopping your vegetables—thick slices of carrots and rough dice on onions, if using. Set them aside.
  2. Brown the Chuck Roast: Heat a large pot over medium-high heat with a splash of oil. Season the roast with salt and pepper, and sear it for 4-5 minutes per side.
  3. Sauté Aromatics: Remove the roast and toss in the onions, sautéing until soft, about 3 minutes.
  4. Add the Rest of the Ingredients: Return the roast to the pot, sprinkle in garlic and carrots, then pour in balsamic vinegar and optional broth.
  5. Simmer Low and Slow: Cover and simmer on low for 2-3 hours or bake at 325°F (160°C).
  6. Check for Doneness: Ensure the roast reaches 200°F (93°C) and can be easily shredded.
  7. Final Touches: Let the roast rest for 15 minutes before slicing, and thicken the sauce if desired.
