Patriotic Poke Cake

A delightful and colorful Patriotic Poke Cake perfect for celebrations like the Fourth of July and Memorial Day, featuring layers of Jell-O, whipped cream, and fresh berries.

Ingredients

  • 1 box of white cake mix
  • 3 large eggs
  • 1 cup of water
  • 1 package of strawberry Jell-O
  • 1 package of blue raspberry Jell-O
  • 1 cup of whipped cream
  • 1 cup of blueberries
  • 1 cup of strawberries, sliced
  • Red, white, and blue sprinkles (optional)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Combine the white cake mix, eggs, and water in a large mixing bowl and mix until smooth.
  3. Pour the batter into a greased 9×13-inch baking dish and bake for 30-35 minutes.
  4. Prepare the Jell-O by dissolving each flavor in 1 cup of boiling water and let it cool.
  5. Poke holes in the baked cake with the end of a wooden spoon.
  6. Pour the cooled strawberry Jell-O over the cake filling the holes, then repeat with the blue raspberry Jell-O.
  7. Cover the cake with plastic wrap and refrigerate for at least 4 hours.
  8. Spread the whipped cream evenly on top of the chilled cake.
  9. Top with sliced strawberries and blueberries, then add sprinkles if desired.

Notes

This cake is perfect to prepare a day in advance since it tastes even better the next day. Cover leftovers and store in the fridge.
